This recipe makes 3 servings. You will need a slow cooker.
Ingredients:
- 1 pound uncooked skinless chicken breast tenders
- 1 bag (1-1/8 oz) BBQ Quest chips
- 1/4 cup almond meal (this is different than almond flour, a little courser and darker because of nut skin)
- 1 egg
- Canola oil spray
Recipe:
Spray bottom and sides of slow cooker with canola spray
In a bowl, beat egg. Place chicken tenders into egg mixture and coat all sides of the chicken.
Open bag of chips and crush chips to Panko-like consistency. Empty into separate bowl. Add almond meal to chips and mix to combine.
Remove one chicken tender from egg mixture and place into chip-nut mixture, flipping the chicken to coat both sides. Place into slow cooker. Repeat with remaining tenders. Spray tops of tenders with a spritz of canola oil.
Cook on high for 1-1/2 hours. Remove lid and wipe off condensation. Replace lid but leave it slightly off center (1/2 - 1 inch) so that the steam can escape and allow the chicken to crisp. Continue cooking for 1 hour.
Serve with your favorite dip!
