This recipe makes 4 servings. You will need a slow cooker.
Ingredients:
Sweet & Spicy Asian Turkey:
- 1 pound extra lean ground turkey
- 4 cloves of crushed garlic
- 2 tablespoons tomato paste
- 2 cups of shredded Cole slaw mix
- 1 package of frozen stir-fry vegetables (peppers and onions)
- 1 tablespoon rice wine vinegar
- 1 tablespoon arrowroot
- 1/3 cup of crushed pineapple with the juice (save left over juice for slaw)
- 2 tablespoon low sodium Soy sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon Sriracha sauce
- 1 tablespoon fresh grated ginger
- 2 portobello mushroom caps
Spicy Slaw:
- 2 cups Cole slaw or broccoli slaw
- 2 scallions sliced
- Pinch of salt snd white pepper
- 2 tablespoon rice wine vinegar
- 1 tablespoon sesame oil
- 1 tablespoon of Sriracha
- 1 tablespoon of Pineapple juice
Recipe:
Sweet & Spicy Asian Turkey:
Mix arrowroot in the soy sauce then put in all ingredients in the slow cooker and mix together.
Take stems off mushrooms and scrape off the gills. Place them on top of the slow cooker.
Cook on high for 2 hours or 4 hours on low
Spicy Slaw:
Mix all the ingredients
Refrigerate until needed
Plate it:
Spoon Asian turkey mixture onto cooked portobello mushrooms caps and top with the Spicy Slaw.
And than STUFF YOUR FACE like no one is watching!!
