Healthy Deep Dish Cookie Pie!
Wait until you see the ingredients I used! Somebody give me an award for taking the hell out of healthy!

Also, you don't have to bake this into a pie. You can eat the cookie dough. Do whatever creams your soda.
IngredientsÂ
- 1/2 cup quick cooking oats
- 1 cup drained chickpeas (mine had sodium, so I didn't add a pinch of salt to this recipe)
- 2 TBSP unsweetened applesauce
- 2 TBSP coconut oil
- 3 TBSP coconut sugar
- 2 tsp vanilla extract
- 1/4 tsp baking soda
- 1/2 tsp baking powder
- 1/3 cup dark chocolate chips
Recipe
- Preheat oven 350 degrees F
- Grease a springform pan (mine was 6 inches).
- Blend all the ingredients (except the chocolate chips) in a food processor until SMOOTH. Taste and adjust sweetness as needed.
- Fold in the chocolate chips (save a few chips on the side). You can eat this as cookie dough, or make the pie.
- Transfer the mixture into the springform pan. Top the cookie with the remaining chocolate chips (make it look pretty).
- Bake for ~25 to 30 minutes (until the centre of the pie is set). Let stand for 10 minutes before removing from the springform pan.
- It depends how you cut the bars, but it yields about 6 servings.
- I recommend you eat them warm, fresh out of the oven. You can store them in the fridge.
