This recipe makes 12 muffins.
Ingredients:
- 1 cup almond flour
- 3/4 cup PB&Me powdered peanut butter
- 1/2 cup zero-calorie sugar replacer (e.g. Swerve)
- 1 tablespoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 cup rolled oats
- 2 medium bananas
- 1/2 cup unsweetened cashew milk
- 1 large egg
- 1 teaspoon vanilla extract
Recipe:
Preheat the oven to 375 degrees Fahrenheit.
Mash the bananas in a bowl. Add all of the other ingredients and mix thoroughly with an electric mixer.
Place paper liners in a 12-serving muffin tin. Divide batter equally in the 12 cups. Bake for 18-20 minutes or until a toothpick comes out of the muffin clean. Allow the muffins to cool and then enjoy!
